Hi,

it is implemented in the current development version via
the option Conjugate

ComplexConjugate[C1 SpinorUBar[p1, m1].SpinorV[p2, m2]]
ComplexConjugate[C1 SpinorUBar[p1, m1].SpinorV[p2, m2],
  Conjugate -> {C1}]

but not in the stable version 9.2.
